White Fish Fritters

You'll love this yummy recipe. It's all the way from Whitianga, New Zealand.

bball.gif (926 bytes) 1 cup flour
bball.gif (926 bytes) 1/2 tsp. baking powder
bball.gif (926 bytes) 1/2 tsp. salt
bball.gif (926 bytes) 1 egg
bball.gif (926 bytes) 1/2 cup milk (approx.)
bball.gif (926 bytes) 125 g. or approx. 1 fillet firm white fish cut in strips
bball.gif (926 bytes) oil for shallow frying
bball.gif (926 bytes) lemon wedges

Mix flour, baking powder and salt into a bowl.   Add egg and sufficient milk to mix to a
smooth batter.  Dip pieces of fish in mixture and fry in a large frying pan until golden
on both sides.  Drain on absorbent paper and serve with lemon. 

Serves 4.
