Kiwi Biscuits

Here is our favorite new cookie recipe from New Zealand. These cookies
are light and reminiscent of shortbread…but better! This recipe comes from
the kitchen of Megan Carmichael, Whitianga, New Zealand.

         bball.gif (926 bytes) 100 gr. (1/4 - 1/2 cup) softened butter
         bball.gif (926 bytes) 1/4 cup white sugar
         bball.gif (926 bytes) 2 Tbs. Sweetened condensed milk
         bball.gif (926 bytes) 1 Tbs. Baking powder
         bball.gif (926 bytes) 1 cup flour
         bball.gif (926 bytes) 3/4 cup chocolate chips*

Combine butter and sugar until creamy. Add milk, and stir. Add baking powder
and flour and combine until just mixed. Add chocolate chips and mix all together.
Roll dough into balls (golfball size or smaller) and place on an ungreased cookie
sheet. Press down with fork tines. Bake in a moderate over at 350 and remove
when the bottoms become golden brown. Makes approximately 14-16 cookies.

*In New Zealand, chocolate chips are more like tiny bits of chocolate, much smaller
than the American formed 'chip'. If using this recipe with standard chips, chop them
up before using. Also, chips can be substituted with raisins or half & half of each.
