Savoury Fish Steaks

Like Alaskans, New Zealanders certainly know how to cook fish.

bball.gif (926 bytes) 4 fish steaks (hapuka, tuna, kingfish)
bball.gif (926 bytes) 4 tomatoes, blanched and sliced
bball.gif (926 bytes) 4 tsp. malt vinegar
bball.gif (926 bytes) 1 cup soft breadcrumbs
bball.gif (926 bytes) 2 tsp. finely chopped onion
bball.gif (926 bytes) 2 TBS melted butter

Wash and pat fish steaks dry.  Place in a baking pan.  Arrange tomato slices on top. 
Sprinkle with vinegar.  In a bowl combine breadcrumbs, onion and butter.  Spoon this
mixture on top of tomatoes.   Cook at 200 C or 350 F for approximately 20 minutes or
until fish is cooked through.

Serves 4.
